Hello Foodie friends,


Here is the first harvest salad of the season! One of my favorite salads for sue, so versatile to accompany a juice roasted chicken, delicious fish or any other meat of your choice.


The combination of the kale, apple and nuts, adds an extra later of crunch. The tangy feta is just perfect and the velvety tangy apple cider vinaigrette is what to need to ELEVATE this salad to the next level.


Here are the simple ingredients:

  • dino kale
  • apples
  • feta cheese
  • seasoned walnuts
  • pomegranate seeds
  • apple cider maple vinaigrette

Ingredients

  • 2 cups of dino kales cut into pieces 
  • 1/2 apple sliced ( reserve in water and salt to avoid browning) 
  • 1/4 cup of crumbled feta 
  • 2 Tbsp of pomegranate seeds 
  • 1/4 cup spiced hot honey walnuts 
  • Apple cider maple vinaigrette:
  • 1/4 cup of apple cider vinegar
  • 1/2 cup of extra virgin olive oil
  • 1 Tbsp of maple syrup
  • 1 tsp of dijon mustard
  • 1 minced garlic clove
  • Salt and Pepper to Taste
  • Spiced hot honey walnuts:
  • In a hot pan toss the walnuts lightly to warm them up for about 5 minutes. Remove from heat and add into a bowl
Instructions

First massage the kale with salt and 1 Tbsp of dressing.
In a nice salad platter, arrange a layer of the kale.
Then add sliced apples, candied walnuts, feta and pomegranate seeds. 
Drizzle desired amount of the apple cider maple dressing.
Enjoy! 
Vinaigrette:
In a mason jar, simply add all the ingredients, close the lid and shake well. Ready to use and save the rest for later.
Spiced hot honey walnuts:
In a hot pan toss the walnuts lightly to warm them up for about 5 minutes. Remove from heat and add into a bowl. Drizzle about a Tbsp of honey or hot honey if you have it and 1/4 tsp of pumpkin spice seasoning. Toss together and lay it flat.
Tips
  • you can use spinach, arugula or mix greens instead of kale
  • replace walnut with pumpkin seeds or sunflower seeds.
