I used to think that salads needed meat in order to be filling, but I finally discovered a hearty vegan salad that is filling and perfect for fall. This salad is not only loaded with flavor, but also loaded with lots of nutrients that fuel you and will keep you full for the rest of the day. The sweet potato gives you carbs for energy, the avocado adds healthy fats, and the seeds load the meal with protein. On top of that, the maple dijon dressing adds the perfect fall flavor that complements this harvest bowl so well. This will be a staple for you year round!
Vegan Harvest Bowl W/ Maple Dijon Dressing

Ingredients
Salad
- kale, massaged in olive oil and set in the fridge for an hour
- air fried sweet potatoes
- diced apple
- pumpkin seeds
- sunflower seeds
- cranberries
- avocado
- hemp hearts
- salt & pepper to top
Maple Dijon Dressing
- 1/4 cup olive oil
- 1 tbsp apple cider vinegar
- juice from 1 lemon
- 1 tbsp maple syrup
- 2 tsp dijon mustard
- salt + pepper
Instructions
- Massage the kale in olive oil and set in the fridge for 30 min - 1 hr.
- Air fry diced sweet potato at 400F for 12 min.
- Start on the maple dijon dressing.
- Add all of the toppings to the kale.
- Combine well with the dressing.
