Microwave Sea Salt Potato Chips

Did you know that you can microwave your own potato chips, and they will taste just as crispy as store bought? Yes, it’s possible…and without the greasy mess and extra calories of frying!


This method is great for portion control because you make only what you need, eliminating the temptation of sneaking into a available stash. It also allows you to control the amount and quality of the ingredients. Use as much or as little salt as you like. The same goes with the oil.


Want to create different flavors? Try sprinkling on seasoning before you microwave…garlic, cayenne, paprika, whatever you choose. Give this technique a try and have fun with it!

Ingredients

  • 1 large potato (about 3/4 lb.)
  • 1 tbsp. olive oil
  • sea salt
Instructions

Wash and dry potato. Peel skin, if desired. Using a mandoline or a sharp knife, cut into 1/8″ to 1/16″ inch slices. 
Rinse the slices under cold water until the water runs clear to remove excess starch. Or soak in a bowl with plenty of water for 15 minutes, then drain and rinse.
Line a microwave oven proof plate with a few layers of paper towels. Remove a small handful of potato slice from the bowl. Pat dry on a clean kitchen towel. Brush the top with olive oil. Sprinkle with salt. Flip over. Oil and salt the second side.
Arrange slices in a single layer on the plate and without touching each other. Microwave at full power for 3 minutes. Potato slices will begin to brown slightly. Turn slices over. Microwave an additional 1-2 minutes at full power or 2-3 minutes at 50% power. The edges will curl. Remove chips that have become crispy and turned light brown early. Continue cooking the remainder until they are done. Place chips on paper towel line surface to cool. 
Repeat cooking the remaining potato slices. Store in an airtight container.
Makes 2 servings.
Tips
  • The cook time provided in the Recipe Info section is the total cook time for 3 batches. Cook time per batch is 5-6 minutes. You may need to cook an additional batch for larger potatoes.
  • Cooking time may vary depending on the thickness of your potato slices and the strength of your microwave. Keep on eye on the slices while they cook as cooking time may be faster or slower than the suggested timeframe. Adjust cooking time accordingly.
  • Omit oil for a healthier option.

    I have made these potato chips. I LOVE them, tho in my microwave they take much longer. 7 + min. on one side a little less on the other. Just test them out how your microwave works.

      Yes, cooking time may vary depending on the strength of your microwave and also on the thickness of your slices. You should get the hang of it after the first couple batches.

    Well, I thought about it, but figured that the time/energy it takes to cook these little critters it's only 5 mins to the supermarket. Plus if I cooked one layer they would be all gone before the next and so on.

      I completely get where you’re coming from!! This recipe does take a little time, but it’s a great way to practice quality control if that’s what’s important to you. But suppose you are shut in for a couple of days due to inclement weather and you have an uncontrollable urge for chips, but there is no way you’re going to leave the warmth and comfort of your house, this recipe would be great way to satisfy your craving. lol
