My name is Mary and I’m a lazy baker. I’m happy to use a short cut for a cake or cupcakes, especially during the lazy days of summer!

Easy 2-Ingredient Cupcakes couldn’t be easier, made with a 12 ounce can of soda and a boxed cake mix! A handy formula to know when eggs and oil are valuable commodities during a pandemic and with fewer shopping trips.

I used a Duncan Hines Lemon Supreme Cake Mix and a can of 7-Up for additional lemon flavor. For less mess and easy scooping which makes for uniform cupcake size, use an ice cream or batter scoop.

Just cake mix and a can of lemon-lime soda. . . no oil, eggs or water needed for these cupcakes. You can use a diet soda or flavored carbonated water to save additional calories, reducing the fat and sugar in these cupcakes if you prefer. Top with homemade frosting of your choice and no one will be the wiser!

Ingredients

  • 1 box Duncan Hines Lemon Supreme Cake Mix
  • 12 ounce can of 7-Up
Instructions

Preheat oven to 350 degrees. Follow the directions on the box for mixing (minus the other ingredients).
Blend cake mix and can of soda in a large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes. Use a ice cream scoop to scoop batter or pour batter in muffin tin lined with cupcake papers, filling batter 2/3 full and bake immediately.
Bake in a preheated 350 degree oven for 18 – 23 minutes or until cupcakes test done with a toothpick. Remove cupcakes to wire rack to cool completely before frosting with your favorite recipe.

    Can you use Diet soda?

      I wouldn't use diet soda as the sweeteners will break down with the baking heat and give the cup cakes a foul taste. The same may be true for some of the flavored seltzers if they have chemical sweeteners in them. Reguar sodas have sugar in them and you can use the "store brand" ones also. I have store brand Pineapple soda and will try using that since I think it would be great.
