A good hearty salad is a dish that always sounds appealing to me. I’m a huge salad lover and I am always trying new combinations of ingredients to incorporate into the salads that I create.

For this salad I decided to use Kale as the base. The trick to enjoying a good kale salad is to properly prepare the kale, this will prevent you from eating a super tough and chewy salad. The best way that I have found to soften up the tough kale leaves is to wash and dry it as usual, and then give it a good massage with your hands using a splash of olive oil. This will not only soften up the leaves, it also makes it much easier to digest.

Once you have prepared your kale, you are ready to top it with your favorite salad garnishes.

Wash, dry and chop the kale. Drizzle a tbsp of olive oil over the kale and massage the leaves for sevenal minutes to soften them.

Add the apples, shredded carrots

and broccoli.

Garnish with feta cheese, dried cranberries and pumpkin seeds.

Whisk together the dressing and pour over the salad.

Gently toss until everything is evenly incorporated.

Ingredients
For the Salad
  • 4 cups loosely packed chopped kale
  • 1 medium size grated carrot
  • 1 finely chopped apple
  • 1 1/2 cups chopped broccoli
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries
  • 1/4 cup pumpkin seeds
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • I tbsp Dijon mustard
  • 1 clove minced garlic
  • S+P to taste

For the Salad

Tips
  • This is a great make ahead salad as the kale will not wilt or get soggy.
