When you want sushi but all you have is tuna and zucchinis 😆 There is a solution to literally everything right! This recipe is the perfect meal / snack to curb your sushi craving. Obviously it doesn't taste like sushi, but it's a quick and cute alternative. It can be prepared in under 15 min, doesn't need any cooking time, it's completely raw, super refreshing and easy to make.


It's a healthy option that includes protein (from tuna) and vegetables. It is served with a soy chili sauce to add some kick. You got to eat it with chopsticks to get that Japanese dinner vibe!

Ingredients
For the Zucchini Tuna Sushi
  • - 2 zucchinis cored
  • - 1 x 170g can of flaked tuna (drained)
  • - 1 tbsp mayo
  • - 1/2 tomato diced
  • - 1/2 lebanese cucumber diced
  • - 2 tbsp crumbled feta
  • - squeeze of lemon
For the Sauce
  • - 1/2 cup soy sauce
  • - 1/4 cup rice vinegar
  • - few drops of chili oil
Instructions

- Core the zucchinis. Save the filling for another recipe.
- Add tuna to a bowl, drain excess oil (or water), and add the rest of the ingredients to the bowl. Mix well.
- Stuff zucchinis with tuna mix, refrigerate for 10 min (optional), then slice zucchinis to make sushi-thick pieces.
- Combine sauce ingredients and serve with zucchini boats
