FRUIT-FILLED CANTALOUPE

I tend to make this recipe more in the spring and summer, but if you're a fruit-lover, it's a great way to enjoy fruit all year long! This Fruit-Filled Cantaloupe is made with cantaloupe halves, lined with green leaf lettuce, and filled with cantaloupe balls (scooped from the center of the melon), strawberries, and blueberries.

You can add or substitute other fruit you like, such as pineapple chunks, mandarin oranges, grapes, blackberries, raspberries, banana slices, and/or sliced kiwifruit. It's really easy to make this recipe "your own."

These are such a delicious way to enjoy fruit...and so pretty and colorful too!

Ingredients

  • 2 cantaloupes
  • 1 cup blueberries
  • 2 cups halved strawberries (stems removed)
  • 1/4 cup apple juice or apple cider
  • 1 1/2 Tablespoons lemon juice
  • Optional sweetener: 1 Tablespoon honey, or to taste
  • 1 bunch frisee or green leaf lettuce
  • Other fruits you can substitute or add: pineapple chunks, mandarin oranges, grapes, blackberries, raspberries, banana slices, sliced kiwifruit.
Instructions

Cut cantaloupes in half and remove seeds.
Scoop round balls of cantaloupe out of each half with a melon baller, leaving about 1/2 inch of cantaloupe on the inside of the melon.
Combine cantaloupe balls, blueberries, and strawberries, (or other fruit if you’re substituting or adding any) in a large bowl.
In small bowl, mix the apple juice, lemon juice, and honey, if desired; pour this mixture over the fruit mixture and toss lightly.
Line the cantaloupe halves with lettuce and spoon fruit mixture into each cantaloupe half. Cover and refrigerate until ready to serve.
