Ingredients

  • 1 Block (8 oz) full-fat cream cheese, room temperature
  • 1 Can (14 oz) full-fat sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 premade 9-inch graham cracker pie crust​​.
Instructions

In a large mixing bowl beat cream cheese until light and fluffy. Scrape down the sides of of the bowl as needed to make sure all the cream cheese gets beaten.
Pour in the condensed milk and beat until mixture is smooth.
Add in the lemon juice and mix at low speed until completely and evenly combined.
Pour the lemon pie filling into the graham cracker pie crust. Use a spatula to smooth and even out the surface.
Place pie into fridge for several hours to set (best if overnight).
Tips
  • Keep pie in the fridge until ready to serve. It can also be made 2-3 days ahead of time.
  • You can also add some lemon zest to the filling.
  • Decorate with whipped cream after pie has set.

    I mixed everything together as you have it written in the recipe. When I was finished combining that I divided the batter in half 1/2 I put a half a teaspoon of vanilla in one half and mix it all back. Both are good but I like that tiny touch of vanilla. Thank you for sharing.
