GODDESS AVOCADO SAUCE

This is my Go To sauce! A spin on the famous Green Goddess Dressing. Although it has cilantro as the main herb, I added avocado to add creaminess and richness tot his amazing dressing.
It is truly amazing, and can be used as a dipping sauce or salad dressing. Let me start by saying it is creamy, flavorful and made with just a handful of ingredients.
The great combination of the avocado, cilantro, garlic, yogurt and lemon is just perfect balance of tanginess and flavor. The avocado adds a special level of creaminess.
I liked to used as a dipping sauce with the thinly crispy tostones from Trader Joe's or the perfect dressing for my chicken salad.

GODDESS AVOCADO SAUCE
Recipe details
Ingredients
- 1 ripe avocado
- 1 cup of cilantro or about a handful
- 2 garlic cloves
- 1/2 cup of yogurt
- 1 lemon (about 1-2 TBSP of lemon juice)
- 1/4 tsp of salt
- 1/4 tsp of pepper
Instructions
- In a blender add all the ingredients. First, scoop out the avocado flesh into blender, then add yogurt, cilantro, lemon juice and seasonings. Just blend for desired consistency. Adjust salt and pepper to taste.
- Simply add more lemon juice to thin it out and turn it into a salad dressing. I will say 1 TBSP of lemon juice.
- For this post, I used the goddess avocado sauce as dipping sauce with plantain chips or thin tostones from Trader Joes. I also used for mu chicken salad crips appetizers. I simple mix shredded chicken breast with desired amount of this delicious goddess avocado sauce and plated over thin crispy plantain tostones. Then garnish with red bell peppers.

where are all the carbohydrates coming from ? 1/2 cup of my plain yogurt is maybe 5 carbs, 2 tbs of lemon juice has 1.7 carbs and an avocado has about 5 as well ?!?! the reason I ask is I am type 1 diabetic and I count all my carbs when eating things !
I do not like cilantro. Can I just leave it out, or should I replace it with some other herb?
