Hello Foodie Friends,


How about some spiced grilled shrimp and creamy avocado dressing to start your weekend vibes. I love that this dish comes together so easy and less than 15 minutes.


This weekend I got some jumbo shrimp, peeled and deveined, just leave the tail for display. My go to seasoning is perfect for seafood, chicken and meats. The combination of the smoked paprika and cumin, add a delicious flavor and color to the shrimp.


Simply pad dry the shrimp, drizzle with a little extra virgin olive so the seasoning sticks to the shrimp, and set aside so it marinades while you make the avocado sauce. For the cilantro avocado sauce you will need, ripe avocado, extra virgin olive oil, cilantro, lime juice, garlic, salt and pepper. Blended to smooth consistency and ready to enjoy as dipping sauce or turn into a creamy delicious salad dressing.

Ingredients

  • 1 lb of jumbo tail-on shrimp (peeled and deveined)
  • 1 Tbsp of grilling seasoning
  • 2 Tbsp of extra virgin olive oil
  • Grilling Seasoning:
  • 1 Tsp of smoked paprika
  • 1 Tsp of ground garlic powder
  • 1Tsp of cumin
  • 1Tsp of Salt & pepper
  • (optional 1/4 Tsp of cayenne pepper)
  • Cilantro Avocado Sauce:
  • 1 large avocado
  • handful of cilantro
  • 2 large leaves of basil
  • 1 garlic clove
  • the juice of 1 lime
  • Salt & pepper to taste
  • 1-2 Tbsp of olive oil
Instructions

Grilled shrimp:
In a bowl add the clean shrimp, add the olive oil and add the 1 Tsp of grilling seasoning. Let it marinade while you make the dipping sauce.
Later, in a hot grill or cast iron grilling pan, cook the shrimp about 4 minutes each side. The key is when you see changing color for pink, the shrimp is ready. Remove from the heat and plate.
For the cilantro avocado sauce, in a food processor add all the ingredients and blend until smooth desired consistency.
In a platter, add the shrimp and a small bowl with dipping sauce, garnish with freshly chopped cilantro.
Tips
  • You may serve these shrimp over mix geeen salad , using the cilantro avocado sauce as salad dressing.
