Easy Airfryer Sweet and Sour Cauliflower With Homemade Sauce

I've made veggies with sweet and sour sauce on many occasions, but this time, I decided not to use a store-bought one but to make my own version of it. If you have some sauce left, don’t worry — you can store it in the fridge for a couple days or even use it as a dip with your fries! There are plenty of other benefits of making it at home: you’re sure to know what’s in it, and the ingredients are much cheaper than buying whole bottle in the store. It absolutely doesn’t require a lot of work so I would definitely give it a try if I were you.

Ingredients
For the homemade sauce
  • 1 cup of pineapple sauce
  • 1 cup of ketchup
  • 1/2 cup of soy sauce
  • 1/6 cup rice vinegar to your taste
  • 2 tsp. cornstarch
  • 2 tsp. water
For the cauliflower
  • salt and pepper
  • florets of 1/2 head cauliflower
  • 1/3 cup cornstarch
  • 2 Tbsp. garlic powder
  • olive oil
  • basmati rice, sesame seeds, spring onion for serving
Instructions

Firstly, let´s make the homemade sauce. In a medium sauce pan bring the pineapple juice, ketchup, soy sauce ad vinegar to a boil. Cook for 1-2 minutes. Dissolve the cornstarch in the water. Add to the sauce and using a wire whisk mix it well. Cook for 5-10 minutes until it thickens perfectly. It will thicken when it cools too.
Cook the cauliflower in salted water for 5-10 minutes until fork-tender. Drain it under cold water.
Evenly cover the cauliflower with the cornstarch and the garlic powder. Season with salt and pepper.
Transfer the cauliflower into the basket of the airfryer, drizzle some olive oil all over. Bake it at 200C for 30 minutes or until nice and crispy. I like to mix it every 10 minutes so that it bakes evenly.
Mix the cauliflower together with the sauce.
Sprinkle some sesame seeds all over, serve with steamed rice and spring onions.
