My big sister introduced me to guacamole at a young age. I'm pretty sure every human being on the planet must love guacamole. It's perfect for fajita bowls, burritos, tacos, chips and salsa, avocado toast...


There are so many ways to make guacamole just as there are countless ways to make salsa. This is just a baseline for you to play with. Many people argue whether diced tomatos belong in guacamole, but I enjoy them, so I would recommend trying it at least once!


The musts are onion, cilantro, and lime juice for sure. But you can tweak the amounts and seasoning to your liking!

Ingredients

  • 2-3 ripe avocados
  • 1/2 cup white or yellow onion, finely diced
  • 1/2 cup roma, vine, or steak tomato, finely diced
  • 1/2 cup cilantro, finely chopped
  • 2 limes, juiced
  • Salt, pepper, and sugar to taste
Instructions

Trim, peel, and finely dice yellow or white onion.
Wash and finely dice tomato and strain to remove excess juice.
Rinse cilantro well and chop finely.
Cut the avocados in half lengthwise. Twist to expose the flesh.
Use a spoon to remove avocado flesh into a bowl. Keep the hulls and seeds.
Mash avocado flesh with a fork to the smoothness you desire.
Fold in other ingredients.
Smooth top, place avocado seeds into the guacamole and cover with hulls, exterior facing up.
Cover the bowl with plastic wrap and lid.
Chill at least 30 mins in fridge. The flavors will develop over time.
Tips
  • AVOCADOS: The best way to choose avocados from the grocery is to choose the ones that are still quite green and allow them to ripen over the course of a few days. Avocados bruise easily, so squeezing them to test for doneness will often brown them. If you are on a time crunch, however, you can select avocados that are a deep black/purple color. Check the circular stem nub at the top. If you can press it down easily, the avocado is ripe.
  • ADDITIONAL SEASONING: For more flavor to avocado toast, I recommend adding garlic powder, garlic salt, onion powder, or onion salt!
