Ingredients
- 1 pound large shrimp, peeled and deveined, (cubed or whole)
- 2 cups chopped onion
- 1 cup Mexican cheese (or any cheese you like)
- 1 cup chopped cilantro
- ½ cup shredded green onion
- 1 ½ limes
- Sour cream
- Canola oil
- 3 avocados
- Fresh salsa
- Onion powder to taste
- White corn tortillas
- 2 tablespoon olive oil
- Old bay seasoning
- 2 cups diced tomatoes
Instructions
- Season your shrimp with old bay seasoning and onion powder, stir and set aside. These little guys are about to get a makeover!
- While that’s happening, drizzle a skillet with some olive oil and heat over medium-low heat.
- Add half of the chopped onions, tomatoes and cilantro, let it cook for 1-2 minutes. Place the seasoned shrimp in the hot skillet and cook for about 5-7 minutes, stirring occasionally so they don't burn. You'll know they're ready when they've got that irresistible golden hue.
- To make your guacamole add avocado, shredded green onion, lime juice, onion powder, salt, and the rest of the chopped onion, cilantro and cube cut tomatoes in a bowl. Grind them with a hand grinder until smooth.
- In your other skillet Warm up your flour tortillas or that lovely, slightly crispy edge. Or if you’re lazy like me just pop them in the microwave for a few seconds. Careful when taking them out they can get hot!
- Now, it's time to assemble your tacos. Grab a tortilla and load it up with your guacamole, cooked shrimp, sour cream, top with shredded Mexican cheese and garnish with cilantro and serve with salsa. Don't be shy; pile it on like you're getting ready for a red carpet event!
