One Minute Flax Muffin
If you’re following a low carb lifestyle, this one minute flax muffin is quick, easy, healthy, high fiber and low carb, you can make it sweet or savory
I have these once or twice a week, I use them for egg sandwiches or just with peanut butter.
Spray a small glass ramekin, (mine is 4 inch round and 1 inch deep) with cooking spray. I’ve also seen these made in a microwaveable coffee mug
Add 1/4 cup ground flaxseed
One whole egg
1/4 teaspoon baking powder
3/4 teaspoon of cinnamon, at this point you can also add some sweetener of choice to make it sweet, I don’t do this and enjoy it savory
Mix well
Microwave on high for one minute *Note: microwaves vary, one minute does it in mine*
Once done it’ll look like this airy and puffed up, be careful, the glass may be hot. Let cool for a minute or two and remove from the glass, it should just pop out
Slice in half like an English muffin and top with whatever you like!

For the muffin
- 1/4 cup ground flaxseed
- 1 egg
- 1/4 tsp baking powder
- 3/4 teaspoon cinnamon
- non stick spray
Instructions
- Spray glass bowl or mug, mix ground flaxseed, egg, baking powder and cinnamon until combined in the same mug
- microwave on high for 1 minute
- let cook, slice in half and top with butter, peanut butter or an egg.
