  • 8 oz. of Cool Whip
  • 1 cup of Heavy Cream
  • 1 teaspoons of Vanilla Extract
  • 1 and ½ cups of Carrot Cake Mix
  • Coconut Flakes
  • Pecans
  • Graham Crackers (for dipping)


Step by Step:


Start by whipping together your cream cheese and Cool Whip using a hand mixer in a large bowl or a stand mixer.

Once smooth and combined, add in your heavy cream, extract, and carrot cake mix.

Mix on high until well combined and smooth.

Place cake batter dip in a serving dish and top with coconut flakes and pecans.

    Hi, there! This sounds simply divine! Have you ever:

    1. Tried this with Neufchatel (lighter cream cheese) or whipped cream cheese, Lite Cool Whip, and fat-free 1/2-1/2 or skim milk? I'm just trying to get cals down... OR,
    2. Tried this vegan? My daughter is dairy-free and I'm always hunting for dairy-free treats for her. I was just curious!!!

    PS If you HAVEN'T tried it with option #1, to reduce calories, *I'M* going to, and I'll let you know the results!!! THANK you for posting; as I said, it sounds AMAZEBALLS - like, skip the 'Nillas and gimme a spoon!!! I ADORE carrot cake!!! ~Chrissie

      To the snarky replies stating "at the grocery store", I live in Canada and do not see carrot cake mix that often on the shelves. It's hit and miss if you can find it. I normally use spice cake mix if I am following a recipe that calls for carrot cake mix. Please bear in mind that the viewers of this site are international and the ingredients called for are not readily available around the globe. Getting off my soap box now.
