This Easy Chicken Salad Recipe is healthy and light. It is made with shredded chicken, apple, dried raisins and bell pepper – it has great texture, crunch and creaminess. This recipe is perfect for an easy lunch or fun appetizer!

Shredded chicken, diced apple, bell pepper, onion, grapes and raisins mixed with mayo in a large serving bowl.

Ingredients Needed:

  • Chicken breasts
  • Apple
  • Grapes
  • Bell pepper
  • Dried raisins
  • Onion
  • Almonds
  • Salt & pepper
  • Mayo or hummus
  • Mixed greens, bread, etc.


A great thing about this recipe is that it is completely customizable based upon your preferences and what’s available during any given season. But you should try it this way first, because it is the best! Sweet apple, crunchy bell pepper, and chewy dried raisins — it’s so yummy and light! And that is how it should be, too.

Ingredient Notes For This Easy Chicken Salad Recipe:

  • Apple – My all-time favorite apple is the Honeycrisp apple so that is what I use here. Feel free to use whatever you like though.
  • Raisins – You can use raisins or cranberries here. Raisins are the healthier option, though, because they are not covered in inflammatory oils which is bad for the gut.
  • Binder – Feel free to use either mayo or hummus. If you are interested, my recipe, The Best Classic Homemade Hummus is a great option.
  • My favorite clean mayo is by Chosen Foods. It is made with 100% pure avocado oil and organic ingredients. The texture and taste is amazing, too! The best part is there are no added flavors or bad for you oils like a lot of common mayo brands on the shelf.
  • A second runner-up mayo that I like is by Primal Kitchen. It is a clean brand as well. *(Both are great brands, but the Chosen Foods mayo is way less oily and the texture is spot on).
  • How to Serve – You can serve it over a bed of mixed greens, on bread, in a pita pocket, in a wrap or with crackers. And to make it into more of a dainty appetizer, you can serve it on thinly sliced apple rounds. Delish!

Ingredients

  • 2 large Chicken Breasts (1.5 lbs.), cooked and shredded
  • 1 Honeycrisp Apple, diced
  • 20 Green Grapes, halved
  • 1 Orange or Red Bell Pepper, diced
  • 1/2 Red or Yellow Onion, diced
  • Dried Golden Raisins, just a handful
  • Optional: Sliced Almonds, a small handful
  • 1 1/4 tsp Freshly Ground Black Pepper
  • 1/4 tsp Himalayan Pink Salt
  • 1/2 cup Chosen Foods Classic Mayo or Classic Homemade Hummus, or to taste
  • Mixed Greens, Bread, Pita Pocket, Crackers or Apple Slices
Instructions

Boil the chicken: In a large pot of boiling water, cook the chicken until it looses its pink color. (Takes 20-25 minutes).
Fruits and veggies: During this time, prep all the fruits and vegetables and place in a large mixing bowl. Set aside.
Pulse the chicken: Once the chicken cools, pulse it in a food processor until it reaches a fine consistency. Add the shredded chicken to the mixing bowl with your other ingredients and give it a good mix.
Season: Add mayo, salt and pepper and mix until well combined.
Serving suggestions: Serve over mixed greens, on toasted bread, in a pita pocket, in a wrap, over crackers or apple rounds.
Tips
  • If possible, use all organic ingredients.
  • Servings: If making sandwiches this will make four. 
  • Mayo: Feel free to try the mayo by Chosen Foods or Primal Kitchen. *(Both are great brands, but the Chosen Foods mayo is way less oily and the texture is spot on). 
  • Bread: My personal favorite is the 7 Nut & Seed Bread by Base Culture. This brand is grain, gluten, preservative and dairy-free.
