This pineapple chicken salad recipe is bursting with tropical flavors. Served up in flaky, golden-brown phyllo cups, this bite-sized appetizer makes the perfect quick and easy finger food for a summer cocktail party.

When I say these pineapple chicken salad phyllo cups are soooo darn good and highly addicting, I mean it.


It’s hard to stop at just one!

The blend of sweet and savory notes will have you clamoring for more.


Ingredients For Pineapple Chicken Salad Phyllo Cup Appetizers

  • 2 cups cooked chicken breast or rotisserie chicken, shredded
  • 1 cup of canned crushed pineapple, drained
  • 1/2 cup celery, chopped
  • 1/4 cup slivered almonds
  • 1 cup seedless red grapes, halved
  • 2 tablespoons red onions, diced
  • 3/4 cup mayonnaise
  • Dash of Lawry’s seasoned salt (to taste)
  • 3 boxes phyllo cups (15 shells per box)


Chicken Salad With A Tropical Twist

To begin, cook and shred two cups of chicken breasts with forks or a pair of meat claws.

Cut down on your prep work by substituting rotisserie chicken from the grocery store for cooked chicken breasts.

Next, wash and chop 1/2 cup of celery, and half one cup of seedless red grapes and add them to a large mixing bowl.


Then dice some red onion and strain one cup of canned crushed pineapple.

Next, add the pineapple, onion, celery, and grapes to a large mixing bowl along with 1/4 cup of slivered almonds.


I love the extra crunch the almonds add to this chicken salad recipe. But, if almonds aren’t your thing, you can leave them out. Or, try substituting a different nut instead, like chopped walnuts or pecans.

Combine the shredded chicken with the grapes, pineapple, celery, onions, and almonds. Then, dump in the mayonnaise and stir the chicken salad mixture until it is well combined.


At this point, I like to add a generous dash of Lawry’s seasoned salt to give the pineapple chicken salad a bit more pizzaz. But, if you don’t have any seasoned salt on hand, a few pinches of salt and pepper will do the trick.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped celery
  • 1/4 cup slivered almonds
  • 1 cup seedless red grapes, halved
  • 3/4 cups mayonnaise
  • 2 tablespoons red onion, diced
  • dash Lawry's seasoned salt (to taste)
  • 3 boxes baked phyllo cups (15 shells per box)
Instructions

Shred the rotisserie chicken using forks or meat claws and set aside. Then drain the pineapple. Chop the onion, celery, and slice the grapes.
Combine the chicken, grapes, onion, celery, and thoroughly drained pineapple in a large mixing bowl. Sprinkle in the almonds and stir to combine.
Stir in the mayonnaise and season with Lawry's seasoned salt as desired.
Chill the chicken salad for 1 hour. Then drop one spoonful of the chicken salad mixture into each phyllo cup. Serve immediately and enjoy!
