Caprese Egg Bites

This summer I have found a new obsession with all things caprese. It's nothing new to me, I went to Italy a couple years ago and when I got home I included tomatoes, mozzarella, olive oil, and basil in almost everything I cooked. Egg bites are such a simple recipe to use with any leftover vegetable or other ingredient in the fridge. This time I made a caprese version and it does not disappoint! You can follow this recipe to make the same theme or use any of your leftover ingredients in the fridge/pantry to make a different version of egg bites. Enjoy!

Ingredients
Caprese Egg Bites
  • 8 eggs
  • 1/4 cup milk
  • 4 oz chopped mozzarella
  • 1/4 cup chopped fresh basil
  • 6 quartered grape tomatoes
  • Pinch of salt and pepper
  • (optional) pinch of onion salt and red pepper flakes
Instructions
Caprese Egg Bites
Preheat the oven to 350
Grease a 12 cup muffin pan
In a medium mixing bowl mix eggs, basil, mozzarella, grape tomatoes, and seasonings
Mix until we'll combined then evenly pour in muffin pan
Bake at 350 for 20 minutes
Tips
  • Double or triple this recipe to put some in the freezer for later
  • Experiment with different ingredients for different egg bite flavors

    How do you freeze these well?? Every time I freeze things it’s a flop but my mom can do it the same way and hers turns out better. But I would totally make similiar if we could freeze them well and Reheat them well

      I individually wrap in parchment paper and then place into a freezer bag pressing the air out. Having them individually wrapped prevents freezer burn and also has them grab and go ready for microwaving (the reason I don't use saran wrap)

    I must have missed this somehow, but since you're calling these "Bruschetta Egg Bites", I'm guessing there's a slice of toasted baguette or some kind of bread under each one, right?
