Happy New Year! It is 2024 and we are starting strong with meal prep recipes for easy or on the go breakfast. Here is an easy recipe to start your day right and bring the sunshine: these goat cheese, sausage and potatoes egg bites, are fluffy and delish. The combination of the sausage and goat cheese is a great addition and elevates the flavors of these egg bites.


This recipe has only a few ingredients to make a delicious treat, high protein and satisfying breakfast. You may enjoy by itself to take on road trips or easy bites on the go.


Ingredients:

6 eggs

-1/4 cup of milk

- 2 small potatoes peeled and diced

- 1 green onion

- 6 chicken breakfast sausages @amylufoods

- 1/3 cup of goat cheese

- 1 Tbsp of extra virgin olive oil

- Salt, pepper and smoked paprika to taste

-Green onions for garnish


You may remove the potatoes to keep them keto and low carb. You may change the cheese if you wish with cheddar or mozarela. Just add the cheese of your choice.

Ingredients

  • - 6 eggs
  • -1/4 cup of milk
  • - 2 small potatoes- diced
  • - 1 green onion
  • - 6 chicken breakfast sausages @amylufoods 
  • - 1/3 cup of goat cheese
  • - EVOO
  • - Salt, pepper and smoked paprika to taste 
Instructions

First: sautee the potatoes, sausages and onions for about 8 min, season with salt and pepper.
In the meantime, grease a muffin tin with avocado oil.
In a bowl crack open each egg and whisk them, add seasoning to taste with salt, pepper & a couple of pinches of smoked paprika .
Add a spoonful of the potato sausage mix to each muffin hole, add the goat cheese and top off with egg mixture.
Bake at 375 for about 20 minutes.
Tips
  • Tip I I used a tray with water to place my muffin tin on top to prevent from burning at the bottom and keeps them fluffy.
