I love making these little egg bites because they are super delicious, healthy, and easy to make. I have a busy lifestyle and long work hours. I make these in advance and they can be kept in the refrigerator or freezer for easy grab-and-go meals. I use whatever ingredients I have on hand, but the basic principle of the recipe remains the same. Use a deli meat on the outside of the egg bites, prosciutto, turkey, salami, ham, fill the muffin tray with an egg mixture and whatever veggies or spices you want and top with whatever cheese you want. It is also a great recipe to clean out whatever scraps of bits and bites you have leftover in your fridge and mix them up.

Ingredients

  • 12 thin slices deli turkey 
  • 10 large eggs 
  • 1/2 tsp salt and pepper 
  • 1 tsp smoked paprika 
  • 1/3 cup minced red pepper 
  • 1/2 cup shredded cheddar cheese 
  • 1 jalapeño, cut into 12 thin slices 
Instructions

Spray nonstick muffin pan with avocado oil 
Line muffin pan with a slice of Turkey 
Whisk together eggs, add salt, pepper, smoked paprika
Add red pepper to egg and mix thoroughly
Pour egg mixture into muffin pan 
Evenly distribute pinch of cheese over muffin pan 
Top with jalapeño 
Into 350 degree oven for 12-15 min 
Eat immediately or store in a tight container in fridge or freezer.

    How long will they stay in the fridge? Do you thaw them out first if in the freezer?
