I love love love these high protein egg bites for breakfast prep! I like to make them on Sundays and eat two each morning throughout the week. It may not sound like it, but pesto, parmesan, and eggs are an elite combo. You just have to trust the process!! Plus, adding a small amount of cottage cheese makes them nice and rich without changing the texture. Not to mention these egg bites are a great source of protein. At around 10 grams of protein in each one, it is the perfect way to start your day off on the right note.

Ingredients

  • 4 eggs 
  • 1/2 cup egg whites 
  • 1/4 cup milk
  • 1/4 cup cottage cheese 
  • 1/4 cup pesto 
  • 1/4 cup parmesan 
  • Salt, pepper & garlic powder to taste
Instructions

Preheat oven to 350°.
Whisk all ingredients together and pour into a well greased muffin tin.
Bake for 20 minutes or until set.
