I’ve decided to share some of my “You know it must easy if I’m willing to make it” Recipes with you. I realized that some of you may be just like me and prefer to let someone else do the cooking. However, there are times when it becomes necessary to prepare a meal and these are some of my go recipes.

Today I’m sharing how to make this delicious Easy Hot Chicken Salad Recipe. This is a recipe that was given to me at a Church fund raiser over 30 years ago. Once I tasted this dish, I had to have the recipe and I’ve been making it ever since. You can see a few easy appetizer recipes here.

This is a great luncheon recipe because you can double or triple the recipe easily. Also, you can mix ingredients ahead of time and just pop in the oven right before your guest arrive. This is one of my go to recipes when entertaining because it is so super easy and actually inexpensive to make. You can see more main dish recipes here.

First, you want to cook and chop your chicken breast. Next, mix all your ingredients together except the potato chips and cheese.

Ingredients

  • 1 cup Mayonnaise
  • 2 cups Cooked Chicken Breast salt to taste
  • 2 cups sliced Celery
  • 2 tbsp chopped onion
  • ½ cup Lemon Juice
  • ½ cup sliced almonds
  • ¼ cup crushed potato chips
  • ½ cup shredded cheddar cheese sharp
Instructions

Heat oven to 450 degrees
Mix all ingredients except potato chips and shredded cheese together in mixing bowl.
Transfer ingredients into a lightly greased baking dish. Top with crushed potato chips and cheese.
Bake in 450° oven for 10-15 minutes. Just until hot.
Tips
  • You may also use rotisserie breast or canned chicken breast. I have used each with great results
  • You can also substitute the almonds with water chestnuts if you prefer or due to allergies.
  • To reduce calories, you can substitute Plain Greek Yogurt for the Mayonnaise

    My mother used to make this when she hosted the "Bridge Club" ladies

    She would make more than she needed for them and we would have it at supper. One of my very favorites of the many things she made!! She used the almonds AND the water chestnuts.
