Some days all you need is simple and easy comfort food!

These “orecchiette primavera” which in Italian literally means “springtime” bring all the taste and colour of the beautiful and warm land where I come from on a plate!

A yummy example of Italian style “pasta fredda” which means “cold pasta”. A great fresh pasta best enjoyed during the warm season.

This was so good and ready in less than 15 minutes. The best quick meal ever!

These orecchiette are super fresh and delicious!

This is the perfect meal to enjoy either cold or warm! Or even to take to a picnic!

  • 400gr pasta
  • 1 aubergine/eggplant
  • 1 garlic clove
  • 2 teaspoons capers
  • 6 sun dried tomatoes
  • 6 cherry tomatoes, on the vine or Roma tomatoes
  • 1 cup rocket salad/arugula
  • 4 tablespoons extra virgin olive oil or more if needed
  • 1 teaspoon oregano
  • salt
  • black pepper
  • Parmesan cheese
Instructions

Fill a pan halfway with water and bring it to boil at a medium heat covering it with a lid to accelerate the process.

While you wait for the pasta to cook, prepare the sauce.

Cut the aubergine in small cubes and pan fry them with chopped garlic, chopped tomatoes, extra virgin olive oil & salt. Cover with a lid and let it cook for about 5 minutes.

Then add the sun dried tomatoes and capers. Cover with the lid again for another 5 minutes until both aubergines & tomatoes are soft.

Once the pasta is cooked, transfer it in the pan with the sauce adding 1/2 glass of cooking water. Mix well at very low heat.

Then transfer on the plates and add some rocket salad leaves on top, some more extra virgin olive oil if needed, black pepper & if you like a sprinkle of Parmesan cheese too!
