Skewered Ribbon Squash

We grill all year long, in my opinion meat just tastes better, and so do vegetables! Here’s a fun way to make zucchini & yellow squash on the grill
Piles of thin ribbons skewered and seasoned, then lightly grilled are just amazing!
You’ll want to shave the squash the long way on a mandolin
Almost too pretty to eat!
Using a back and forth motion, ribbon them on the skewers, I used metal, if you’re using wooden ones make sure to soak them thoroughly.

Ingredients
For the skewers
- 2 medium zucchini
- 2 medium yellow squash
For the herb marinade
- 1/4 cup chopped herbs, I used fresh parsley, dried basil and oregano
- 1 tbsp Badia complete seasoning
- 3/4 stick butter melted
- 1 tbsp olive oil
- 3-4 garlic cloves minced
- Salt & pepper to taste
Instructions
- Pour the herb marinade over the skewers and let sit for 30 minutes, then cook on a preheated grill for 5 minutes, then the skewers and cook an additional 5 minutes.
