Ingredients

  • 5 small Sweet Potatoes, peeled and diced
  • 1 box Chicken Stock
  • 3 T Non-dairy Butter, divided
  • 1 1/2 c Carrots, shredded
  • 5 ribs Celery, diced
  • 1 T Dried Onion
  • 1 T Garlic, minced
  • 2 cans Coconut Milk
  • Salt and Pepper
  • 3 cans Clams, do not drain
  • 2 T Arrowroot powder
  • 1 c Bacon, cooked and crumbled
  • Fresh Chives, chopped
Instructions

In a large stock pot on medium high heat, add butter, celery, garlic and onions. Cook until aromatic.
Add clams, sweet potatoes coconut milk, chicken stock, carrots, bacon and salt and pepper.
Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
In a small bowl, add arrowroot powder and a tiny bit of water. mix well. Add to the chowder to thicken.
Add butter and chives.
Enjoy!

    This sounds really delicious, but I have a question: Why are the clams added so early-on? By the time the potatoes are done 5-6 min, the clams would be tough. I was thinking maybe add those ingredients with the clam juice and then at the very end of cooking add the clams themselves. Tell me what you think.

    PS/ I LOVE your dishes and your tureen is to die for.
