Welcome! I am so glad that you are here. I always enjoy our time together. Do you love fast and easy one pot meals? Especially if they are delicious? And perfect for any meal of the day? Today, I am showing you The Best Sweet Potato Hash Recipe. Come on, I’ll show you.

This is one of my favorite “go to” recipes. I love the flavor combination of sweet and savory. Kids of all ages will love this simple recipe. Oh, I did I mention that it is healthy. It’s chock full of fruit and vegetables.

Best Sweet Potato Hash Recipe

When my husband and I decided to eat healthy, I thought that we had to eat fish or chicken and a salad for lunch and dinner, every single day for the rest of our lives. Which, just happened to bore me to tears just thinking about it. That’s when I really began to research healthy, whole foods. I actually got so excited about what I COULD eat, and not depressed about what I COULDN”T eat. This delicious Sweet Potato Hash is one of my favorite recipes that I came up with. In fact, I ended up writing a whole cookbook on clean eating recipes. You can get the cookbook below.

Best Sweet Potato Hash Recipe

Here are the ingredients that you will need for this delicious one pot meal: Sausage, garlic, onion, ginger, cumin, curry powder, cinnamon, chili powder, sweet potatoes, apples, cilantro and spinach.

Peel and dice sweet potatoes. I like using the golden sweet potatoes, instead of the orange sweet potatoes-it’s just my preference, but either one is delicious in this recipe. Dice apples. Chop spinach and cilantro.

In a large frying pan, drizzle olive oil, sausage, onion, garlic and ginger. Cook until sausage is cooked through. Remove from the pan and set aside. Add another drizzle of olive oil, sweet potatoes, apples and spices. Cook until tender. Add the sausage back in, as well as the spinach. Cook until the spinach wilts. Enjoy!


It’s really that easy. And very little clean up. Perfect for a busy week night dinner, a weekend breakfast or for leftovers. It’s super easy and delicious-which is why it is one of my favorites.

The Best Sweet Potato Hash Recipe

Ingredients

  • 1 lb. Ground Sausage
  • Olive oil
  • 1/2 Onion, diced
  • 1 T. Garlic, minced
  • 1 T. Ground Ginger
  • 3 Sweet Potatoes, peeled and diced
  • 2 Apples, diced
  • 2 t. Cumin
  • 3 T. Curry Powder
  • 1/4 t. Cinnamon
  • 1 t. Chili Powder
  • 1/2 t. Cilantro
  • 2 c. Fresh Spinach, chopped
  • Salt and Pepper to taste


Directions

  1. In a large pan on medium high heat, add a drizzle of olive oil, onion, garlic, ginger and sausage. Cook until sausage is cooked through. Remove sausage from pan and set aside.
  2. In the same pan, add another drizzle of olive oil, sweet potatoes, apples and spices. Cook until tender.
  3. Add sausage, spinach and cilantro to sweet potatoes. Cook until spinach wilts.
  4. Enjoy!
