Salat Olivier (Russian Potato Salad)

There are many versions of potato salad, and many versions of Salat Olivier which is the Russian potato salad. But trust me when I tell you, my mom's is THE BEST! Everyone always devours it.

You will need 2 baked large potatoes, half an onion, 1 apple (yes that's right, I said apple!) a jar of kosher dill pickles, shredded carrots,2 hard boiled eggs, green peas and a table spook of mayo.

Peel and dice the cooked potatoes.

Then dice the onion, pickles, and peel core and dice the apple.

I like to use a combo of fresh herbs, such as scallions, chives, parsley, ect.

Combine all the diced ingredients in a large bowl to make it easier to mix with a teaspoon of salt and some pepper to taste.

Add a tablespoon of mayo and mix it all together. Now here is the important part do NOT add too much mayo and do NOT eat it immediately. Its not going to taste good, the salad needs to sit in the fridge for about and hour. After that, you can add more mayo or salt if needed.

Ingredients

  • 2 baked large potatoes
  • half an onion
  • 1 apple
  • 1 jar of kosher dill pickles
  • 1 cup shredded carrots
  • 2 hard boiled eggs
  • 1 can green peas
  • 1/2 cup of fresh herbs: parsley, chives, scallions
  • 1 tbsp mayo
  • 1 tsp salt
  • pepper to taste
Instructions

dice all ingredients and combine in a large bowel
mix with mayo, salt and pepper
let it sit in the fridge for at least and hour
