Roasted Carrot Salad

This gorgeous plant based meal is packed with flavor! I seriously cannot get enough of this salad. The sweetness from the honey paired with savory garlic and a zing of lemon - it is truly an explosion of flavor.
This salad contains pearled couscous, roasted carrots, feta cheese, and pistachios which will keep you super full and satisfied!
It can be served warm or cold, as a side dish or main, and sometimes I serve it with chicken or pork.
Omit the feta cheese for a dairy free version. Carrots can be cooked in the air fryer or oven, both cooking instructions listed in my recipe below.

Ingredients
For the Salad
- 1 cup diced carrots
- 1 minced garlic clove
- 2 tbsp olive oil
- 1/2 lemon
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup of pearled couscous
- 2 tbsp honey
- 4 cups of arugula
- 1/4 cup pistachios
- 1/4 cup crumbled feta cheese
For the Dressing
- 2 tbsp honey
- 1/4 cup olive oil
- 1 lemon
- 1/8 cup chopped parsley
- 1 tsp kosher salt
- 1/2 tsp black peper
Instructions
For the Carrots
- Mix thee diced carrots, minced garlic clove, 2 tbsp honey, 2 tbsp olive oil, juice from 1/2 lemon, salt, and pepper
- Add everything to air fryer basket and roast at 400 F for 10-15 minutes, flipping halfway
- Add the dressing and serve
For the Couscous
- Boil salted water in a pot then add 1/2 cup of pearled couscous
- Boil the couscous for 7 minutes or until soft then strain it
- Toss the cooked couscous with a drizzle of olive oil to prevent it from sticking
For the Salad
- Add the carrots and couscous to 4 cups of arugula
- Top with pistachios and feta cheese
- Mix in the dressing and serve
For the Dressing
- Whisk together juice from 1 lemon, 1/4 cup olive oil, 2 tbsp honey, chopped parsley, salt, and peper
- Adjust according to taste
Tips
- Pearled couscous can be substituted with orzo rice
- If you don't have an air fryer you can roast the carrots in the oven at 400 F for 30 - 40 minutes, turning occasionally
