Tropical flavors come together in this crunchy and juicy salad. It’s light, refreshing, and so good!

I’m obsessed with tropical flavors and everything tropical. If I were to plan a vacation, my first pick would be a tropical destination filled with beaches! I came up with this salad on a hot Texas summer day. While raiding my kitchen to whip up something light, refreshing, and quick, I came up with this delicious salad.

Pineapple is one of those popular fruits that are available in stores during the summer. You can absolutely impress your guests with this refreshing salad. You could also add ingredients like avocados or cucumbers.

When to serve this salad?


Pool parties! This is one of those perfect salads to make ahead of time, refrigerate, and serve cold for a hot summer day. It has fresh herbs like mint and cilantro, giving it a freshness like no other.

Ingredients

  • 1/2 Pineapple , peeled and chopped
  • 1 Carrot , peeled and julienned
  • 1/4 of an Red onion, sliced
  • 1/4 cup Fresh Cilantro , chopped
  • 1/4 cup Fresh mint , chopped
  • 1/4 cup Slightly Toasted Cashews or any nuts of your choice
  • 1/8 cup Raisins or Dried cranberries check notes
Dressing
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Honey
  • 3 tbsp olive oil
  • 1/4 tsp freshly cracked pepper
  • 1/8 tsp fine sea salt
Instructions
Make the dressing
To make the dressing, put all the dressing ingredients in a mason jar and shake away till combined well. Alternatively, put it all in a bowl and whisk well.
Make the salad
Toast the cashews slightly on the stove top till light brown.
Combine all the ingredients in a large salad bowl and toss with dressing till combined well.Refrigerate for an hour at least before serving. Serve cold!
Tips
  • Raisins: can be omitted if you don’t prefer too sweet. Alternatively, can use dried cranberries for a slight tart taste.
  • Nuts: Feel free to add some pepitas or other nuts for an extra healthy touch.
