Vic’s Trick To…Saucy Sausage & Peppers Skillet
I’ve been suuuuper lazy lately.
I know, crazy right? So unlike me…
But seriously I feel like while we’ve been in quarantine the sink is just an ever-filling pile of dishes.
AM I THE ONLY ONE?!
So in response, I’ve been focusing on as many 1-2 pot meals as possible.
With that, I came up with a quick and easy spin on my favorite, sausage & peppers and turned it into a full dinner I can make in one pan.
Disclaimer: I originally made this in 2 pots, then realized I made a grave mistake. So I even though the pictures don’t quite represent the process, take my word for it.
With that, I bring to you the Saucy Sausage & Peppers Skillet:
First take some sausage links and cook them up in a LARGE pan with HIGH edges on medium, until they’re about 3/4 way cooked. Takes about 7 minutes or so. Then remove them from the pan and set aside.
To the same pan, add some garlic and Italian seasoning and cook until fragrant, about 2 minutes. Then add in a can of diced tomatoes, a bell pepper (cut into strips), and the pasta of your choice. I used this cool edamame pasta, but any will do.
Vic Trick: ensure there’s enough of the sauce to cover the pasta. Add a little water if not and add more seasoning if necessary.
Cook everything together, on medium-high heat, for about 7 minutes, stirring every once in a while. While that cooks, cut the sausage into 2 inch-thick slices.
Add the sausage back into the pan, stir to combine, and cook for another 2 minutes until the sauce is thickened and everything is coated.
Add some salt & pepper or whatever you think, to taste. And you’re done – it’s that easy!

- 1 14.5 oz can diced tomatoes
- 1 large green bell pepper or 2 medium
- 1/2 lb pasta of your choice, I used edamame spaghetti
- Salt & pepper to taste

- Cook everything together, on medium-high heat, for about 7 minutes, stirring every once in a while. While that cooks, cut the sausage into 2 inch-thick slices.
- Add the sausage back into the pan, stir to combine, and cook for another 2 minutes until the sauce is thickened and everything is coated.
- Season more, to taste, then pour into a bowl, top with cheese, and enjoy!

Is the pasta supposed to be cooked before adding or just straight from the package?
