A staple in kitchens all over the world, it is an incredibly easy dish to concoct and will fill your kitchen with the lush and sweet smell of strawberry and rhubarb.


We all know how versatile jam is—here, we have it with crepes, but it can be in cakes, ice cream, toast, etc.—and we also know how easy it is to buy, so why should one try making it themselves?


A few reasons come to mind: customisation of flavour combos and sweetness level (the world is your oyster!), no preservatives, choice of quality ingredients, these are just a few of the good reasons to go for it.

Ingredients

  • 3 cups of fresh Rhubarb, cut into chunks
  • 3 cups of fresh Strawberries, cut into big pieces (I cut one strawberry into four pieces).
  • 1½ cups of jam sugar or white granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
Instructions

In a medium saucepan add rhubarb, strawberries, and sugar. Heat gently and continuously stir until all the sugar has dissolved, then add the lemon zest, lemon juice, vanilla extract and increase the heat.
Cook for another 5-7 minutes depending on your preferred consistency and skim carefully.
Pour into hot, well-cleaned jars that have lids and rubber seals. The jam will continue to thicken as it cools. Store in the refrigerator.

      It's sugar with pectin added this sugar is most useful when you are making jam with fruit which contain low amounts of natural pectin. You can replace with granulated sugar, Stevia, honey, maple syrup
