For Valentine's day we made this lower-carb gluten-free pizza, in the shape of a heart of course. While it's easier to purchase cauliflower-crusted pizza dough, I find they are quite pricey for the quantity and wanted to try making it on my own. This recipe can be made for a fraction of that cost and with simple ingredients. The end result was a fresh, healthy, and tasty pizza.


Feel free to use any of your favorite toppings if you try this out! I kept it simple with green pepper, onion, cheese, and chorizo sausage.

Ingredients
For the Toppings
  • 1/2 green pepper, sliced
  • 1/4 red onion, sliced
  • 1 chorizo, pre-cooked & crumbled
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella
For the Dough
  • 1/2 medium-large cauliflower
  • 1 egg
  • 3/4 cup shredded mozzarella
  • 2 tbsp Italian seasoning
  • 3 tbsp gluten free flour
Instructions
For the Dough & Toppings
Heat oven to 425F and line a tray with parchment paper
Cut the cauliflower into florets then add to a blender or food processor
Blend until cauliflower rices, then add to a cheese cloth or clean kitchen towel and squeeze out excess water - This is an essential step to ensuring a crispy crust!
Add the riced cauliflower to a bowl, then add the egg, cheese, flour, and seasonings
Mix together then place the dough on the lined tray
Roll out the dough until 1/2 inch thick, shape it however you please but remember the thinner the dough, the crispier but be mindful of burning. It should be even all throughout to avoid uneven cooking.
Bake for 20 minutes then add the toppings and bake for an additional 15-20 minutes until dough is cooked through, cheese is golden brown, and veggies are tender
Tips
  • Broil the pizza for 1-2 minutes on high at the end, to achieve golden brown cheese
  • Add dried oregano, dried chili flakes, and garlic powder to garnish & increase the pizza flavour!

    This site hardly ever gets the nutritional info right. Does no one check this? 69 grams of carbs per serving. 🙄🙄🙄. Why even put the info in if it is incorrect??

    Are the carbs count correct on this? Per the pizza hut web site the recipe has 30 more carbs than their meat lovers pizza
