Sugar Cookie Chex Mix

If you are anything like me, you always have big plans for making neighbor treats early each year…and then Christmas Eve rolls around and you are scrambling to make them something yummy at the last MOST stressful minute!!! Seriously, you think I would learn. The only year I was even REMOTELY on the ball, I tried making my neighbors caramels 4 times…FOUR TIMES!! They just would NOT set up!!! Then a friend of mine told me that you cannot make caramels in the rain…SAY WHAT?!?! Sooo now I am all about tried and true recipes that CANNOT fail. And this SUGAR COOKIE CHEX MIX is a favorite!!

ANDDDD the best part…if you miss Christmas, you can make this Chex Mix ANY time of the year. Just change up the M&M’s, and you have a whole new treat. Use holiday colored or seasonal colored M&M’s, throw in some caramel M&M’s, or add peanut M&M’s…the possibilities are endless. But this year when I saw the Sugar Cookie M&M’s, I KNEW Sugar cookies PLUS Chex Mix would be a match made in HEAVEN!! Just make sure you make yourself a bowl too!!!

***This recipe makes one large mixing bowl full. I suggest if you want LARGE batches, to make multiple regular batches. It gets sketchy when trying to mix more cereal and you end up with dry patches…just trust me on this one:)

Ingredients

  • 6 cups Chex Cereal I use 3 cups each of 2 kinds, usually rice and corn
  • 3 cups Golden Grahams cereal
  • 2 cups shredded sweetened coconut
  • 1.5-2 cups nuts I usually use 1 cup slivered almonds and 1.5 cups cashew pieces
  • 3/4 cup butter
  • 1 cup sugar
  • 1 cup corn syrup
  • 1/4 tsp salt
  • 1 large bag sugar cookie M&M's This recipe is great with regular M&M's, Caramel M&M'S, holiday colored M&M's,etc. Also, for MORE chocolatey goodness, I like to use a large bag, PLUS a few extra.
Instructions

Add cereal, coconut and nuts to a LARGE mixing bowl.
Over medium heat, melt butter, corn syrup, sugar, and salt. Bring to a boil stirring frequently. Boil for 3 mins and immediately remove from heat and dump over cereal mixture.
Stir together to coat cereal with sticky mixture.
Let cool. Wait until WELL cooled before adding M&M's. If you add the M&M's too soon, they will melt and you will lose the shell colors and your mix will not be as pretty.
After 5 or so minutes, add your M&M's and stir. I like to leave a few M&M's out and then add them to the top of the serving bowl/container. It is just to add to the cuteness factor.
