Tuna Stuffed Cucumbers

This is such an easy snack, ๐—ง๐˜‚๐—ป๐—ฎ ๐—ฆ๐˜๐˜‚๐—ณ๐—ณ๐—ฒ๐—ฑ ๐—–๐˜‚๐—ฐ๐˜‚๐—บ๐—ฏ๐—ฒ๐—ฟ๐˜€ ๐Ÿฅ’ and they also happen to be high in protein. I canโ€™t even explain to you how satisfying this was. I stuffed the cucumbers with wild albacore tuna but you can stuff them with chicken or if youโ€™re vegan, I think stuffing them with mashed garbonzos and avocado would be amazing.


I got inspired to make these after hollowing out eggplants and zucchinis for an Arabic dish that we make. I thought stuffing cucumbers with tuna would make a healthy high protein low carb snack and guess what, it sure hit the spot.


For the cucumbers:


My go to are English cucumbers because I can achieve more consistent-sized cucumber rounds. However, this time I used Persian cucumbers that I bought at Trader Joeโ€™s and they turned out fine. The trick to hollowing them out easily is to use an apple correr. It makes the job much easier. If you donโ€™t have one, you can slice the cucumbers first into 3/4 inch thickness and use a melon baller or small spoon to scoop out the flesh. I leave the skin on because it contains a good source of fiber and Vitamin A.


For the pickled ginger juice:


The recipe calls for pickled ginger juice but itโ€™s optional, I just love the flavor it provides to the dipping sauce. The pickled ginger juice I use is the one that comes in a jar with that pink pickled ginger. I buy it from a local Asian market but I think most markets sell it in their Asian section of the store.


These are a great high protein low carb snack. If youโ€™re a meal prepped like I am, they make a great meal prep meal.


This recipe is enough for 2 people but because Iโ€™m on a high protein diet, I ate the entire portion which has 33 gms of protein.

Ingredients
For the stuffed cucumbers
  • 3 small Persian cucumbers or (1 large English cucumber)
  • 5 oz wild planet albacore tuna
  • Green onion, chopped (1tbs)
  • Trader Joeโ€™s furikaki seasoning
  • Trader Joeโ€™s umami seasoning
  • Primal kitchen buffalo sauce, 1 tbsp
  • Pickled ginger juice to taste (opt)
  • Lemon juice, (1/4 of lemon)
For the dipping sauce
  • Fage 0% non fat yogurt, 1 tbsp
  • Sriracha to tasteย 
  • Coconut aminos, 1/2 tsp
  • Pickled ginger juice to taste
Instructions
For the stuffed cucumber
Wash cucumbers and cut off the ends.
Hollow out the cucumbers and remove the flesh without puncturing the cucumber skin.ย 
In a bowl combine tuna, green onion, buffalo sauce, seasonings & pickled ginger juice. Mix to thoroughly combine, using a fork to break up chunks of tuna.
Stuff cucumbers with the tuna filling, using a small spoon.
Slice to your desired thickness or eat it whole.
Drizzle with the dipping sauce.
Garnish with your fav toppings, I used furikaki & finely chopped cilantro.
ENJOY!
For the dipping sauce
In a bowl, combine yogurt, sriracha sauce, coconut aminos & pickled ginger juice. Mix thoroughly & drizzle over cucumbers.

    I would love to taste this but, will never make it. Too many ingredients that I will probably never use again. Sorry. It does look yummy.
