This Asian tuna salad has a delightful crispy crunch from the leaves, it has beautiful vibrant colour from the red cabbage and it has a super explosive taste from the dressing.


This was the perfect summers lunch which is also really filling and made it simply 10 minutes!

Ingredients

  • 1/3 iceberg lettuce
  • 1/4 red cabbage
  • 1 tin of tuna
  • 1 spring onion
  • 1/3 cucumber
  • Handful sesame seeds
  • Handful sunflower seeds
For the dressing
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp sriracha
  • 1/2 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp peanut butter
  • 1 tbsp rice wine vinegar
Instructions

Finely slice your lettuce and red cabbage. Next slice your spring onions and cucumber into long strands
Now mix all your dressing ingredients in a small pot
Drain your tin of tuna.
To assemble: salad on the bottom, then drizzle with your dressing and sprinkle your seeds on top
