Jalapeno and Green Herb Marinade/ Dipping Sauce

Have you ever had a sauce that serves as both a marinade and a dipping sauce? If not, then this recipe is for you. Made from a combination of Jalapenos and fresh herbs, this versatile sauce can be served on almost everything; fish, chicken, beef and even tossed in a stir fry. Absolutely delicious!

Can I substitute different fresh herbs?

Absolutely! You can use different herbs.


What is needed to make this Sauce?

Apart from jalapenos, you need fresh herbs! You need to bare in mind that using dried herbs will not make this sauce as flavourful as it it supposed to be and it will loose its green colour.

How can this sauce be used?

Use it as a marinade for:

Fish, chicken, beef or as a dipping sauce.

Ingredients

  • 2 spring onions

  • 1 green pepperoni (bell pepper)

  • 6 jalapenos

  • 20g fresh parsley (6 stems)

  • 20g fresh basil(6 stems)

  • 10g fresh thyme(3 sprigs)

  • 1 medium onion

  • 1 cup vegetable or olive oil (set aside two tablespoons)

  • 2 small seasoning cubes (4g size)

  • 1 tsp salt
Instructions

Chop all fresh herbs

In a food processor or blender, blend until all the ingredients are broken into tiny pieces. Not necessarily a smooth puree.

Heat 2 tablespoons of oil. Pour the blended herbs into the oil. It should start bubbling almost immediately. Please do not stir at this point; you risk getting burnt.

After 3minutes stir to check if the liquid has reduced. Keep stirring till all the liquid is gone. Add the rest of the oil, seasoning cubes and salt.

Stir to incorporate and take off heat.

Use as a marinade or as a dip.

      Hi Jenny! Salt, sugar, monosodium glutamate (msg), saturated fat, flavouring, preservatives and corn starch. I know this is a lot.

      In case you need a substitute, I'll suggest you use Worcestershire or Soy sauce.

    What type of seasoning cube? And is the “1 green PEPPERONI” actually 1 green pepper?

      Hi Lise, I normally use the standard Maggi seasoning cube or the knorr vegetable seasoning cube. By Pepperoni, I mean Bell Pepper. I think I should make mention of it in parenthesis. Thanks
