Apple Cider Vinaigrette "Jersey Girl Knows Best"

I love trying new vinaigrette's for my salads! It breaks up the monotony ;). If you like your salad dressing to be on the more vinegar side you will sure to love this dressing! Ready?! Let's do this!

This recipe is fairly simple and using an immersion blender makes it even easier! I had all the ingredients in my pantry so they was no extra trip to the supermarket. Shallot isn’t always in my pantry, but I didn’t use it for the holidays and didn’t want it to go to waste. Shallot have a light onion taste that works well with dressings and any sauces really.

Since I only had creamed honey the dressing will come out thicker. If you want to thin it out you could add a Tbsp. of water.

You can of course use a regular blender or a smoothie blender. Both would work great. If you don’t have any of these you could grate the shallot, mix everything in a bowl or a jar.

I hope you enjoyed this recipe, you can use this recipe as a base and change out the apple cider vinegar for white wine vinegar our red wine vinegar.

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 Tbsp, shallot
  • 1 tsp. Honey
  • 1 tsp. Dijon mustard
  • 1/4 tsp. Salt
  • 1/2 tsp. Black pepper
Instructions

Blend all ingredients together and serve on a salad or use as a marinade.
