Do you love almonds or almond flavoring?! Then you are going to love this recipe! I use almond paste and a puff pastry sheet to make this amazingly delicate and delicious dessert! Ready?! Let's do this!

I rolled out my pastry dough because it stuck to itself and got a little lumpy. It is not necessary to roll it out, but you can 😄

I made my filling less sweet by adding finely crushed sliced almonds to it, but that is totally about preference.

After spreading the almond paste on the center of the puff pastry dough, I cut strips in both ends about 1” thick.

After the egg wash, I sprinkled the crush sliced almonds on top for decoration!

Look how beautiful and golden brown this came out! I love the flecks of crushed almonds! Also, it smells amazing! Your family and guests are going to be so amazed by this dessert you created!

Ingredients

  • 1/2 cup almond paste

  • 1 puff pastry sheet, thawed
Egg Wash
  • 1egg with 1 Tbsp. water, whisked

  • 2 Tbsp. sliced almonds, crushed
Instructions

Preheat oven to 400F.
Take thawed puff pastry sheet and open and lay flat. You can use a rolling pin to smith out the creases or use your hands.
Take a Tbsp of almond paste at a time and spread it with the back of a spoon or pastry knife on the center section of the puff pastry.
Now cut 1” horizontal strips on the left and right side of pastry sheet. Weave the strips over the center of the pastry back and forth left and right, you can either cut that 2 strips of or tuck them under the last two weaved strips. (I cut mine and put filling on them and closed them to make two mini pastries. 😋)
Brush top of pastry with egg wash and sprinkle with crushed almonds.
Bake at 400F for 25 minutes or until golden brown.
Let cool completely and cut into 8 pieces of pastry bliss! Enjoy!
Tips
  • If the almond paste filling is too sweet for you, you can add 2 cups finely crushed sliced almonds to it.

    My family doesn’t like the taste of almond paste. Can you use a good quality fruit preserves?

      I have used red raspberry preserves before and it was delicious with a cream cheese icing /drizzle on top (after baking and warm). I also used walnuts chopped very fine and mixed with brown sugar, white sugar, butter and cinnamon on top during baking...then while warm I'd drizzle that icing on top.. (That's my personal preference).

    Is there a recipe for almond paste? I would like to make this for the family Easter morning!

    • Here is one I have used before. I don't use a food processor but if you have one it does go much quicker. I buy my almonds raw in bulk and toast and grind for each recipe.

      It can also be purchased but sometimes hard to find and can be expensive as well.


      Lastly, I use more paste than the recipe calls for since that's the way my two groups like it.


      There are many almond paste recipes out there. I personally stay away from those that use flour and almond extract. My / our preference is to use the almond itself and enhanced a little with extract.
