Ingredients

  • 5 medium size, ripe peaches
  • 1 can coconut cream
  • 1/4 cup real maple syrup
Instructions

Remove the peach skins and seeds from the peaches. Cut the peaches into chunks 1/4″ to 1/2″ chunks.
Set twenty of the peach chunks aside for later. Place the remainder of the prepared peaches into the blender.
Measure out the maple syrup. Add the maple syrup and the can of coconut cream to the blender with the peaches.
Blend the peach popsicles on high until thoroughly processed.
Add one peach chunk to ten of the cavities in the popsicle mold. 
Pour the blended coconut cream and peach popsicle mixture into the mold. Fill each halfway.
Add an additional chunk of fresh peach to each the cavities of the popsicle mold. Fill the remainder of the molds with the fruit pop mixture. Leave a small space at the top of each mold to allow for expansion as they freeze.
Place the silicone cover for the mold on top of the popsicles you just poured. Insert the sticks.
Freeze these peach fruit popsicles for six hours to overnight.
