Easy Coconut Lime Pineapple Popsicles Recipe

While the cool rainy and snowy weather is lasting a bit longer than we’d like here in Iowa, we’re officially ready for spring and summer. Bring on the sunshine, the warm weather and enjoying cold treats outside on hot days.
Our summer weather may not quite be here yet, but that doesn’t mean we can’t start taste testing delicious recipes. The next addition to our recipe library on Two Kids and a Coupon is a delicious ice pop recipe that is packed with summer flavors.
These easy popsicles only take about 10 minutes to mix up and need about 6 hours to freeze. The number of servings depends on your popsicle maker, but this will make roughly 10 popsicles.
Here is what you will need to make them!
Ingredients:- 1 fresh ripe pineapple
- 1 can coconut milk
- 1 lime, juiced
- ¼ cup honey
- Fresh grated coconut or toasted coconut (optional)
- Blender
- Pineapple corer or knife
- Popsicle mold
- Lime juicer
To get started, you will want to peel and core the pineapple using a knife or a pineapple corer. You will then want to cut the pineapple into smaller pieces, so that it fits into your blender.
In the blender, add the cut pineapple.
Next, add your can of coconut milk.
Add the honey.
Add the juice from one lime.
Blend all ingredients until completely smooth.
Carefully pour your into mold, splitting it evenly between the sections.
You will then want to place a popsicle stick in each popsicle.
Freeze for 6 hours. If desired, dust with shredded or toasted coconut before serving.
