For as long as I can remember, I’ve struggled with gut issues. While in high school, there’d be days I’d miss school due to abdominal pain and extreme bloat. My body needed routine, and, if I strayed from that routine, I’d be in trouble. As I’ve aged, I’ve gotten a better handle on my gut health and have formed healthy habits to ensure more symptom free days. Probiotic drinks that are low in lactose, such as kefir, have become an important staple in my day to day. Probiotics really help soothe my gut. When my gut is happy, my entire body is happy!

Easy Mixed Berry Kefir Popsicles

Ingredients

  • 2 cups Lifeway’s Mixed Berry Low-fat Kefir
  • 1/4 cup flax seeds
  • 6 oz. fresh blueberries
  • 1 1/2 cups frozen mixed berries
  • 3/4 cup Lifeway’s Plain Low-fat Kefir
  • 2 tbsp. freeze dried raspberries
Instructions

Process:
Add mixed berry kefir, flax seeds, and frozen and fresh berries to blender or food processor. Pulse until combined and creamy. Pour mixture into popsicle molds – use a funnel if needed to reduce mess – until about 3/4 of the way full. Divide the Plain Kefir evenly and add on top of berry mixture in molds to create a fun swirl. Top off with remaining berry mixture, seal molds, and add popsicle sticks. Place in freezer for at least 12 hours to set prior to serving.
As a beautiful finishing, add freeze dried raspberries to a small bowl and dip frozen popsicles in prior to serving.
