I struggle with sweets. I never thought I was a sugar addict until I detoxed them from my system. I am here today to tell you, I am hopelessly addicted to sugar. Finding healthy swaps for things like French Fries, with OKRA or comfort foods like, CHICKEN POT PIE, have been easy. The sugar or desserts? Not so much.

The Sweet Solution

It is no secret that sugar from fruits is better for you. When you can harness that natural sweetness, you have created a sweet treat that is easier to recover from than processed sugars. So while this may still be a little higher in calories and carbs, its important to note that the low glycemic factor is a big deal. What that means, is you will not as likely have a sugar crash or follow up craving when you eat low glycemic sweets. And this one has become our favorite!

How to Make It

3 ingredients. That is all you need. Bananas, vanilla and sweetened condensed milk. We like using coconut sweetened condensed milk. Feel free to swap to regular but know the nutritional values will not be the same.

Ingredients

This can't get any simpler really. This is also a good use of those too ripe bananas. The sky is the limit here so feel free to change this up or add to to make it your own.

  • 3 ripe bananas
  • 1 teaspoon vanilla
  • 2 Tablespoons coconut sweetened condensed milk

Instructions

We trade in that slow churn ice cream maker for the convenience of our own freezer. Not only is this simple but you will not be able to tell the difference!

Slice bananas. Add bananas, vanilla and coconut milk to a blender or food processor.

Tips and Tricks

Can I use other fruit this same way?

Yes, some fruits like apples or berries, you may want to cook down a bit to cook off some water. If not, using the sweetened condensed coconut milk will make the mixture creamy and not have ice crystals.

Why is my ice cream crunchy?

Ice cream, using fresh fruit can be a bit watery. This water freezes and turns to ice crystals. Be sure you are adding enough sweetened condensed milk to work against that. Next time, maybe add a bit more.

How long will it last?

This will last in the freezer about 2 weeks. It doesn't make a lot so eating prior to that will be easy!
