Easy Banana Ice Cream is literally just 2 ingredients, Frozen Bananas and Almond Milk. Add in crunchy Graham Crackers as the 3rd ingredient and you have a delicious healthy Banana Ice Cream Sandwich! Ok, Sprinkles are an extra ingredient, but absolutely not necessary for this delicious ice cream sandwich! If you haven’t tried banana ice cream, you are in for a treat! It tastes just like soft serve ice cream and comes together in seconds in a food processor or blender.

My girls looooovvvvee ice cream! If they could eat it all day every day, they would. I supposed that is like most kids, right? So, I really wanted to find a healthier option to give them their frozen treat fix. I had heard of ‘nice cream’ which is basically just fruit-based blends vs. cream-based. But they love that creamy flavor and banana ice cream or banana nice cream gives that!

Prep-Ahead Steps for Banana Almond Milk Ice Cream


You are busy, so these are the steps you can do a day or two in advance to prepare food ahead! (See the recipe below for more details)

This Banana Ice Cream literally has only 2 ingredients: Frozen Bananas and Almond Milk. My younger daughter is dairy free, so I used Almond Milk, but you can use any milk you have in your house. To prep ahead, you ideally want really ripe bananas, which are at their sweetest. Slice and freeze the bananas. This is easiest to do the night before you make them, but in a pinch, they can usually freeze in just a few hours.

I like to buy lots of bananas…some we can peel and eat and others that I let get really ripened and then slice and freeze for smoothies and this ice cream.

Tip: When you slice the bananas, put them into a plastic freezer bag and then slide the slices around into a single layer. This prevents the slices from sticking together in a big clump and allows them to blend up much easier in the blender or food processor.


Make Your Banana Ice Cream Sandwiches


Once the banana slices are frozen, add 2 cups frozen banana slices to a food processor or blender with ½ cup Almond milk (or any milk you have on hand). Pulse to get the blending started and once you see it starting to come together you can just blend. If it is still way too thick and not really blending smooth, you can add another tablespoon of milk but be careful not to add too much liquid as you want it to be thick like soft serve ice cream.

Next, break your graham crackers in half so that you have 2 rectangle pieces per sandwich ‘slice’. Place one graham ‘slice’ down on a sheet pan. TIP: I like to cover the sheet pan with parchment so that the sandwiches are less likely to stick and it’s easy clean up for me. Add a scoop of banana ice cream to the graham cracker bottom, then top with the second graham ‘slice’.

Now comes the optional part…SPRINKLES! My little puts sprinkles on everything…pancakes, waffles, ice cream, cupcakes, cookies… My older one loves mini chocolate chips. Really its up to you what you prefer to add – or add nothing at all! You could even dip these into hot fudge!!!

Can I use other types of Milk in this recipe?

You can use just about any milk that you have on hand in this recipe. It doesn’t have to be almond milk. Coconut milk, soy milk, cashew milk, oat milk, and of course regular cow’s milk will all work.

How long will Banana Ice Cream Sandwiches last in the freezer?

If you seal the sandwiches in an airtight container, they can last 4-6 months. Wrapping them individually can help prevent them from forming ice crystals or sticking together.

What other flavors can be added to the banana ice cream?

As with all ice cream recipes, there are so many variations that you can make with this banana almond milk ice cream recipe! You can add chocolate syrup, chocolate fudge, maple syrup, butterscotch, or fruit syrups. Nutella, peanut butter, almond butter, or any nut butter would be fantastic swirled into it. Or do your own combo, like chocolate peanut butter. Chocolate chips, nuts, mini marshmallows, or coconut are also yummy. Really, anything you want can be added! Go crazy!

Making homemade almond milk is surprisingly easy! It takes very little time and can be done in a blender. Truthfully, I do not make my own, as we do not exclusively use almond milk in my house and I find the price is better to buy vs. make. That said, if you get a good deal on almonds in bulk, then it can be a great option! Here is a good recipe to guide you on how to make homemade almond milk.
