This is the perfect recipe if you are looking for something Christmas themed, easy, and a healthier option than the traditional Christmas cookie or traditional peppermint bark! I made this with leftover pomegranate seeds from my Christmas Salad. They were going bad so I came up with this quick and easy bark recipe! I made a big batch and put it in my freezer. I plan on serving it on Christmas day for my family. I will warn that you should eat it quick when you take it out of the freezer because the chocolate may melt fast! I also live in Florida so it is a solid 70 degrees out every day.

Ingredients
2 Ingredient Chocolate Pomegranate Bark
- 1 cup pomegranate seeds
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
Instructions
2 Ingredient Chocolate Pomegranate Bark
- In a glass measuring cup mix chocolate chips and coconut oil and place in the microwave in 30 second increments until melted
- Mix together until creamy melted consistency
- On a 9x9 baking pan, place parchment paper on pan
- Pour pomegranate seeds in an even layer on the parchment paper
- Pour chocolate mixture over pomegranate seeds in an even layer
