Pomegranate Chocolate Bark

This is probably one of the easiest, most flexible dessert recipes you can find. It's all about tailoring it to your taste. Add a white chocolate drizzle, change the toppings, add more or less - it's all up to you. The most important thing is that you chose what you like and enjoy every delectable bite. Oh, and also that you store the chocolate bark in an airtight container in the freezer, otherwise it will melt before you get the chance to eat it all up. Remove the chocolate bark from the freezer five minutes before you serve it, but no more, as it will begin to melt.

Ingredients

  • 500 grams dark chocolate
  • 1 handful walnuts, chopped
  • 1 handful slivered almonds
  • 1 pomegranate
  • 5 tablespoons candied peanut pieces
Instructions

Cover a large, flat surface (such as a cookie sheet pan) with parchment paper.
To create a double boiler, heat on high in a small pot a small amount of water. Place a heat-proof metal or glass bowl over the pot, ensuring that it is larger than the pot and can sit semi-inside the pot without touching the water.
When the bowl begins to heat up, place chocolate, broken up into cubes inside, and use a silicone spatula to mix it around.
Once the chocolate has melted, take it off the heat and remove from the pot. Immediately pour the chocolate on top of the parchment paper and spread it all out until you have a nice, even, thin layer of chocolate.
Sprinkle your toppings (walnuts, almonds, pomegranate and peanuts) over the chocolate.
Place the chocolate bark into the freezer for at least 2 hours and use your hands to break it up into whatever sized pieces you want just before serving.
