Grilled Romaine Salad & Creamy CilantroDressing
Hello Foodie Friends,
Salads are my favorite dish to accompany any main dish. Specially during the summer, I like to use all the fresh produce and ingredients for tasty, crunchy and refreshing salad bowls.
I know you have seen many grilled romaine salads recipes, but this one will be unique with this creamy cilantro dressing. The toppings can be anything you like, from tomatoes, crunchy smokey bacon, pancetta or croutons.
I simply start with a fresh head of romaine lettuce. Rinse and pad dry. Then spray with avocado oil, and lightly grilled for about 4-5 minutes face down. They key is to put it on a hot grill so it gets the char grilled marks.
Cut each head in half, lengthwise. The rinse and pad dry. Spray with avocado oil.
Grilled marks on point but still so crunchy.

Ingredients
- 2 heads of organic romaine lettuce
- 1 cup of cherry tomatoes
- Shaved parmesan cheese
- Dressing:
- 1 cup of cilantro
- 1/2 cup of extra virgin olive oil
- 1 tsp of smoked paprika
- juice of 2 limes
- 2-3 cloves of garlic
- Salt+Pepper to taste
- 1/2 roasted jalapeno (no seeds) for a kick
Instructions
- First blend all the ingredients for the dressing in a blender and refrigerate.
- Then, cut each lettuce head in half, lengthwise. Then rinse and pad dry. Spray with avocado oil.
- In a hot grill, cook them face down for about 4-5 minutes, until you see the chard grill marks and remove from heat.
- To plate:
- Place the grilled romaine lettuce heads on a plater, add a few spoonfuls of the creamy smokey cilantro dressing, add tomatoes and top it off with fresh shaved parmesan cheese (parmigiano reggiano).
- Enjoy!
