Jerk chicken, spicy slaw and sweet potato mash 🇯🇲
I knocked this up in half hour and my gosh was it delicious!
If you can marinate your chicken over night so much more flavour will be absorbed into the chicken, but if your pushed for time at least give it a couple of hours!
The spicy flavoursome chicken goes perfectly with the crisp and tangy slaw, and some smooth sweet potato mash. It really is a match made in heaven!

Ingredients
Chicken marinade
- Firstly marinade your chicken in my delicious jerk marinade.. 🌶
- -1 tsp Smoked paprika
- -1 tsp Allspice
- -1 tsp Nutmeg
- -1 tsp Cinnamon
- -1 tsp Cumin
- -1 tsp Chilli powder
- -Thumb of Ginger (pealed and finely chopped)
- 14 large cloves of Garlic
- -2 tsp Thyme
- -Salt & Pepper
- -1 tsp Brown sugar
- -1/4 cup Soy sauce
- -1/4 cup Olive oil
- -1 red onions
- -2 squeezed & zested limes
Slaw
- 2 spring onion,
- 1/4 red cabbage,
- 1 carrot.
- 1 tsp olive oil,
- salt and pepper to taste
- 1/2 lime squeeze,
- handful chopped coriander
- 1 clove garlic
- 1/2 red chilli
Instructions
- Marinade your chicken in the ingredients above. If you can, leave it for a few hours or even over night if you have time.
- For your slaw: finely slice some spring onion, red cabbage, and grate some carrot. Add a drizzle of olive oil, some salt pepper, 1/2 lime squeeze, chopped coriander and some finely chopped garlic and red chilli.
- Pan fry your chicken in its marinade, browning off both sides and cooking thoroughly through. Approx 20 mins
- Meanwhile boil your sweet potato and mash with some salt and pepper when soft.
- Serve your juicy marinaded chicken with your fresh crunchy slaw on some soft sweet potato mash!
