One-Bowl Butter Cake
Recently, I had my Mom and Mother-in-Law over for dinner. I wanted to serve a dessert that wasn't too sweet to end our evening. I searched through several of my cookbooks to find the right dessert. After spending so much time in the kitchen preparing dinner (Coca-Cola Glazed Ham, Baked Beans, and Creamed Corn), I was looking for a simple and easy dessert recipe.
And I found just that in this cake recipe. My Mom isn't much on sweets so, I wanted something that I could add a little fruit to. I decided to top the cake with homemade whip cream and added berries to it.
This One-Bowl Butter Cake is the perfect size for a small dinner gathering. I will be making this again and change up the toppings!
One-Bowl Butter Cake

Ingredients
- 1 ⅓ cups all-purpose flour
- ⅔ cup sugar
- 2 teaspoons baking powder
- ⅔ cup milk
- ¼ cup butter, softened
- 1 egg
- 1 teaspoon vanilla
- 3 cups assorted fresh berries
- Whipped Cream (optional)
Instructions
- Preheat oven to 350 degree F. Grease an 8x1-1/2-inch round cake pan; set pan aside.
- In a medium mixing bowl combine flour, sugar, and baking powder. Add milk, butter, egg, and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 1 minute. Spread batter in prepared pan.
- Bake about 30 minutes or until a wooden toothpick inserted near center comes out clean. Cool cake in pan on a wire rack about 30 minutes. Serve warm with berries and, if desired, Whipped Cream.
