This cozy peanut butter cookie recipe is one of my all-time favorites partly because of how easy it is to make (and how easy it is to eat). It requires no mixer, no chill time, no softened butter (just melted), and only needs ONE bowl. Even then, it results in the softest, wonderfully flavored peanut butter cookies ever! For this recipe, I used chunky peanut butter because the crunch of the nuts creates and incredible contrast with the softness of the cookie. All this using less than 10 ingredients and made in less than 10 minutes. You're going to love it! Happy baking :)

Ingredients

  • 6 Tablespoons unsalted butter, browned
  • ⅔ cup granulated sugar 
  • ½ cup chunky peanut butter
  • 1 large egg 
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cup all-purpose flour
Instructions

Preheat oven to 350 degrees.
In a wide heavy-bottomed pan over medium-low heat, melt the butter. Swirl the butter around the pan until it browns. Add in the peanut butter and mix it in for 45 seconds until it become one homogenous mixture.
Transfer to a medium mixing bowl. Whisk in egg and vanilla extract until combined. Add in the baking powder and salt. Add the flour and stir with a spatula or with clean hands until a dough forms.
Scoop dough using a cookie scoop then roll it between your palms to create a smooth dough ball. Place on a lined baking sheet. Press down gently using a fork to form a criss-cross pattern. Repeat with remaining cookie dough. Bake for 10 minutes. Allow to cool before enjoying.

    This looks good, but the list of ingredients say baking soda and in the instructions it says baking powder. Which is correct?
