During this pandemic, I’ve been very inclined to make fun food creations/treats for my kids. For some reason, a lot of them revolve around variations of corn dogs cooked in the air fryer. Believe it not, if you make a thick corn dog batter, you can air fry it in the air fryer without all of the batter just rolling off of it.


I was testing out corn fritters in the air fryer and it turned out so well that I had an idea to make turn them into corn dogs. Yes, it’s a corn dog with real corn in it. If you are using fresh summer sweet corn, the sweetness from the corn alone is enough to provide that hint of sweetness. If you are using frozen thawed corn or canned corn, you may need to add some sugar to aid in that sweet and savory aspect.


I really liked them with sriracha but they can also be enjoyed with ketchup, sour cream or mayo. I hope you guys give this a try!

Ingredients

  • 1 fresh corn cob, kernels shucked which will be about 1 cup of corn
  • 1 egg
  • 1 tbsp flour
  • 1/4 cup panko bread crumbs
  • 1 tbsp mayo
  • 1/2 cup grated cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 scallion, finely sliced
  • 1/4 tsp kosher salt
  • 3 smaller sized hot dogs
  • 3 wooden skewers
Instructions

In a medium sized bowl, mix together the corn kernels, egg, flour, panko bread crumbs, mayo, garlic powder, onion powder, cheese, scallions and salt. Mix together to form the corn fritter mixture.
Take your hot dogs and insert a wooden skewer into it. Using your hands, mold the corn fritter around the hot dogs.
Place the corn dogs into the air fryer and cook at 400F for 10 minutes. Rotate and cook for another 8 minutes or until golden brown.
Serve and enjoy!
